5 potatoes (preferably Russet); 100 g pork fat; 1 ½ onion; a pinch of caraway seed; salt


Potato Babka (Babka ziemniaczana, Kugelis, קוגל)


Chop fat into medium-sized strips, heat in a frying pan over medium heat until liquid fat separates from scratching. Add one finely chopped onion and caraway seed, cook until onion is soft. Meanwhile, grate the remaining half of the onion. Wash potatoes, peel, grate, mixing regularly potato mixture with onion puree to prevent potatoes darkening. Add roasted onions with scratching and salt, mix well. Grease a pot or portion baking forms, transfer the potato mixture in, cook in the oven at 390°F (200°C) for an hour until golden brown. Serve with milk and sour cream.
