900 g pork ribs; 100 g of speck (smoked Tyrolean ham) or smoked sausage; 1 onion; 2 tbs of flour; 1 tbs of mushroom powder; 3 tbs of lard; bay leave; a pinch of caraway seed; 1 tsp of juniper berries; salt, black pepper

Machanka (Mokanka)

Grill ribs with 2 tbs of lard, add diagonally sliced carrots, stir for a couple of minutes, add 4cups of water just enough to cover the contents of the pan. Bring to boil, add 1 onion and bay leaf, cook for 1 hour on low heat. Strain the broth, discard all the solids. Sautee finely chopped onion over medium heat in the remaining fat, add mushroom powder, speck or sausage cut into fine strips, stir, add flour and fry, pour in the broth, add salt, pepper, caraway seed and crushed with a knife juniper berries, bring to boil, pour everything into a pot with a lid. Cook in the oven for 15-20 minutes at 300° F (150°C). Serve with pancakes or potato pancakes, sprinkled with finely chopped pork scratching.
