4 tomatoes; 1 cucumber; 3 red peppers, 1 yellow pepper; 1 onion; 150g brynza or feta cheese; 4 tbsp olive oil; 1 tbsp light wine vinegar; a handful of olives; salt; black pepper
Shopska Salad (Шопска салата, Šopský salát)
Roast the peppers at 200°C for 10 minutes (or hold them over an open flame) before the skin turns black. Place them in a plastic bag and set aside for 15 minutes. Peel the cucumber and slice them lengthways. Chop into thick chunks. Remove the stalks from the tomatoes and chop them into eighths. Peel the onion and slice them into semi-circles. Prepare the dressing: beat the olive oil, vinegar, salt and pepper with a fork. Remove the skins, stalks and seeds from the pepper before slicing it into strips. Mix the salad together in a bowl and serve into bowls. Add the olives and the dressing. Sprinkle with parsley and grated brynza or feta. Serve immediately.
