2 duck breasts; a piece of fresh ginger; 2 cloves garlic; 1 tbsp oyster sauce; 2 tbsp soy sauce; 1 tbsp miso paste; 1 tsp honey; the juice of 1-2 oranges; ½ aniseed star; 1 cinnamon stick; 1 tsp Szechuan pepper; 1 tsp fennel seeds

Fried duck breast with orange sauce

Finely chop the garlic and ginger. Dry the spices in a dry pan on a medium heat and grind them finely. Mix the honey with the soy and oyster sauces, ginger, garlic, and a pinch of the ground spice and rub it over the duck breasts. Leave to marinade for 1 hour. Wipe the duck breasts preserving the marinade and score the skin forming a lattice. Place the breast skin down in a fying pan on a medium heat and allow the fat to run. Turn the breasts over and cook for another 3-4 minutes. Remove them from the pan and set aside covering with a plan to keep them warm. Meanwhile pour the marinade into the frying pan together with the orange juice and leave to boil until it thickens. Sift the sauce. Slice the duck diagonally in thin slices with the skin on top. Serve immediately with the sauce and rice.
