1 cup blueberries; ½ cup thick cream; 1 tbsp sugar; a pinch of cinnamon; salt
Cold Blueberry Soup
Cover the berries with a cup of water and set a few aside for decoration. Bring the pan with the berries to the boil and boil gently for 15 minutes and then blend the mixture with a blender. Add the cream and stir well. Heat the soup to just before boiling point and remove it from the heat. Season with salt and leave to cool. Leave to stand in a fridge for at least 1 hour. Serve sprinkled with the berries.
