1 kg soup bits (head, skin, fins and bones); 300 g salmon fillets; 1 onion; 1 carrot; 1 leek (20 cm white); 2 potatoes; ½ tbsp flour; 1 cup single cream; 1 tbsp clarified butter; bay leaf; black pepper; dill; salt, white pepper


Cover the head, spine and skin with cold water and bring it to the boil. Remove any foam and cook for 5 minutes. Add the bay leaf, peppercorns, and unpeeled onion and cook for 20 minutes on a medium heat. Remove all the bits and strain the stock. Add the diced potatoes, carrot, and sliced leek. Reduce the heat and cook for 15 minutes or until the potatoes are ready. Meanwhile cut the fish fillets into small pieces. Add a ladleful of stock to the flour combined with the butter and stir it well. Add it to the pan and bring to the boil. Add the fish and cook for 2 minutes before add the cream. Heat it through, season well and remove the pan from the heat. Serve sprinkled with finely chopped dill.
