2-3 beets; 2 potatoes; 1 of each salted herring, pickled cucumber, carrot, apple; quail eggs; 1 tbsp. sour cream (or whipping cream); a pinch of sugar; ⅓ tsp. mustard; salt, black pepper

Rosolli (Rosolje, Heringsalat)

Wash potatoes, beets and carrots , cover with cold water, bring to boil. After 15 minutes, remove potatoes and set aside, cook beets and carrots for another 15 minutes. Meanwhile, gut the herring, wash, fillet, skin, remove the bones and cut into small cubes. Make salad dressing: mix in a blender sour cream (or cream) with mustard, salt and sugar. Peel the cucumber, dice into ½” cubes. Peeled vegetables cut into the same size, add seasoning, salt and pepper, mix well. Let stand for 1 hour in a refrigerator. Serve with boiled egg cut in halves.
