300 g ricotta or cottage cheese; 4 shallots; a garlic clove; a bunch of each parsley and chives; a sprig of mint; a couple of sprigs of thyme; ¼ tbsp. of olive oil; salt; black pepper
Soft cheese with herbs
Press cheese through a sieve, add finely chopped shallots, parsley and herbs, salt and pepper, add the oil and mix well. Spread on dried toast and serve.
