1 handful green beans; ½ clove garlic; a few sorrel leaves; 3 tbsp olive oil; 1 tbsp white wine vinegar; 1 tsp Dijon mustard; 1 tsp honey; ½ tsp brown sugar; salt, black pepper
French Green Bean Salad
Wash and trim the beans and blanche them in salted boiling water until soft for approx. 2-4 minutes. Meanwhile mix the oil with vinegar, crushed garlic, mustard, honey, sugar, salt and pepper. Beat it with a balloon whisk until shiny and add the chopped sorrel. Drain the beans in a colander and leave until all the water to run off. Add with the salad dressing and mix. Serve warm with a poached egg.
