300 g feta; 1 cup olive oil; 2 cloves garlic; a pinch of oregano; a pinch of mint; a pinch dry chilli flakes; bay leaf; ½ tsp coriander; ½ teaspoon black peppercorns; salt
Marinated Feta (Mαριναρισμένα φέτα)
Roast the pepper and coriander in a dry pan on a low heat and crush them slightly with some coarse salt. Cover the herbs with oil. Cut the cheese into small cubes. Place a bay leaf in the bottom of a glass jar and place the cheese on top. Pour over the herb oil and close the jar tightly. Leave in a cool place for one week. Serve with pitta bread or toast.
