300 g Greek yoghurt; 3-4 cucumber; 6 tbsp olive oil; 1 clove garlic; a pinch of dry mint; salt, black pepper
Tzatziki (tζατζίκι, Cacık)
Peel and remove the seeds from the cucumber. Grate it and sprinkle with some salt before placing it in a colander. Leave to stand for 15 minutes to allow any excess water to drain away and squeeze it out slightly. Add the garlic puree, yoghurt, oil, salt and pepper, and mint to the cucumber and mix well. Serve with meat and fish.
