1 cup red kidney beans; a smoked pork shank; smoked pork salami; 1 onion; 3 sticks and a piece of celery root; 2 cloves garlic; 2 tbsp pork fat; 1 tbsp corn flour; 1 tbsp smoked paprika; parsley; black pepper; allspice; salt

Bableves

Soak the beans overnight in cold water. Cover the shank with water and bring it to the boil Add the onion, celery root and pepper and simmer with the lid on for 1 hour. Add the beans and cook in a closed pan for another 2 hours. Remove the pan from the heat and remove the onion and celery. Remove the meat from the bone and return it back to the pan with the stock. Meanwhile soften the chopped onion and celery. Add the flour and stir for a few seconds. Add the paprika and cook it quickly before adding 1-2 cups of stock from the beans. Add the pepper, salami, and fried vegetables to the beans and season with salt. Cook it for one more hour on a low heat with the lid on. Add the garlic puree, finely chopped parsley and stir. Leave to stand for 15 minutes with the lid on. Serve with sour cream.
