1 cup masoor lentils; 1 cup rice; 1 onion; 2 tomatoes (peeled or tinned); 2 cloves garlic; a piece of fresh ginger; 3 tbsp ghee; ½ tsp coriander; ½ tsp cumin; 1 tsp turmeric; cinnamon stick; 3 cardamom pods; coriander; 1 dry chilli pepperкинза; black pepper; salt
Khichri (Khichdi, खिचड़ी)
Fry the spices on a medium heat, add the finely chopped ginger and garlic for a couple of minutes. Add the onion and cook until soft. Add the turmeric and fry quickly before adding the tomatoes. Cook for 2-3 minutes. Add the rice, lentils and 1-1.5l boiling water. Bring to the boil, season with salt and cook for 30-40 minutes. Add the coriander, squeeze with lemon juice and serve with yoghurt.
