1 cup yellow lentils; ½ courgette; ½ aubergine; 3cm ginger; ½ chilli pepper; 2 tbsp flour; 2-3 cloves garlic (or a pinch asafoetida); 2-4 tbs ghee; ½ tsp cumin; ½ tsp coriander; 1 tbsp turmeric; 2 peppercorns; a bunch of coriander; salt


Dry the lentils in a dry frying pan and grind into flour. Add the lentil flour and dry, ground spices to the plain flour and mix well. Add the finely chopped vegetables and herbs. Gradually add a little water and mix until the mixture is the consistency of thick cream. Fry in the ghee or vegetable oil on both sides until golden. Serve immediately with a garlic and yoghurt sauce.
