100g lean pork fillet; a handful of the following: uncooked prawns, boiled red rice, beansprouts; 6 quail’s eggs; ½ chilli pepper; 1-2 cloves garlic; spring onions; 1 tbsp palm oil; 1 tbsp sesame oil; 2-3 tbsp soy sauce; coriander
Nasi Goreng (炒飯)
Boil the rice the night before: pour over twice the amount of water to rice and simmer for 30 minutes in a closed pan. Leave it to stand for 10 minutes before removing the lid. Leave to cool. Chop the meat and prawns into pieces the size of peas. Using a wok on a high heat fry the garlic and pepper in the palm oil for 30 secs. Add the pork, stir and add the prawns. As soon as they change colour add the bean sprouts, stir and add the rice. Stir for a few seconds and pour in the soy sauce and sesame oil. Heat through while stirring and add the egg. Cook for 30 seconds and quickly mix the egg together with the other ingredients with a rice spoon or spatula. Serve immediately sprinkled with chopped spring onion.
