1cup ptitim (Israeli couscous); 300g chicken stomachs and hearts; 200g liver; 1-2 onions; 1-2 chilli peppers; 2-3 cloves garlic; 1 tbsp turmeric; 1 tbsp paprika; 1 tsp cumin; 6 tbsp olive oil; salt
Jerusalem Mix (Meorav Yerushalmi, מעורב ירושלמי)
Wash the trimmed stomachs and cover with water. Bring to the boil and simmer for 1.5-2 hours. Meanwhile remove any excess fat from the hearts, wash and cut them in half. Dry them off. Peel and finely chop the pepper, garlic and onion into semi-circles. Boil the ptitim for 7 minutes and drain in a colander. Drain the stomachs, dry them and cut them into small pieces. Fry the pepper and garlic on a high heat in some olive oil for 30 seconds. Add the hearts and fry them a little. Add the spices and mix well. Cook for a minute and then add the chopped stomachs, season with salt and stir. Add the onion and stir well. Add the liver and cook for a few minutes. Add the cooked couscous, stir well and heat through. Serve with a drizzle of olive oil and sprinkled with chopped parsley.
