250 g fresh spinach fettuccine; 150g red caviar; 50ml dry white wine; 2/3 cup thick cream; 2 tbsp olive oil; the grated zest of 1 lemon; 1 clove garlic; salt, white pepper
Fettuccine with Caviar
Squash the garlic with a knife and fry it in some oil until golden. Add the wine, boil it off and remove the garlic. Add the cream stirring and tip in the lemon zest and half the caviar. Heat it through and salt slightly. Season with pepper and put the spinach fettuccine on to boil in some salted water. Cook it for 2 minutes and then drain. Mix it in with the sauce and serve immediately spooning the remaining caviar on top of the pasta in the bowls.
