A handful green beans; ½ cup bulgar; 2-3 cloves garlic; a handful grated Grana Padano; juice ½ lemon; 2-3 tbsp olive oil; black pepper, salt

Green Beans with Goat Cheese

Cover the bulgar with double the amount of boiling water as wheat and leave to stand for half an hour. Add the lemon juice and stir. Meanwhile trim the beans and boil for 3-5 minutes in salted water. Drain and place them in iced water. Drain again and dry with kitchen towel. Quickly fry the beans in the oil, add the crushed garlic, a couple of spoons of water and remove the pan from the heat. Add the cheese, bulgar and season with salt and pepper. Stir well. Serve immediately as an accompaniment to poached eggs.
