300g seafood cocktail (prawns, mussels, squid); a handful of black rice; a clove garlic; ½ chilli pepper; ½ silver skinned onion; chives; a handful basil leaves; 1/3 cup white wine; 4 tbsp olive oil; lemon; salt, black pepper
Seafood Salad (Insalata di mare)
Boil the rice for 40 minutes. Meanwhile fry the garlic, chilli pepper and half the basil in half the oil on a low heat. Turn the heat up, add the seafood and fry for a couple of minutes to seal. Add the wine and cook until the liquid has reduced. Drain the rice and add the seafood, remaining oil and basil. Season with salt and pepper and drizzle with lemon juice. Sprinkle with chives and finely chopped onion, mix well and serve immediately.
