800 g small black mussels; 2-3 portions linguini; ⅔ cup dry white wine; 4-6 tbsp olive oil; 2-3 cloves garlic; 1 chilli pepper; a bunch parsley; salt, black pepper

Linguini with mussels (Linguine con le cozze)

Put the pasta on to boil. Soften the finely chopped chilli and garlic in a wide stewing pan, add most of the parsley setting aside one handful and fry for 1 minute. Add the wine and bring to the boil on a high heat. Add the cleaned and trimmed mussels, season with salt and cook with the lid on for a couple of minutes until all the shells have opened. Drain the pasta in a colander and add to the mussels. Add the parsley and stir well to mix with the sauce. Serve immediately drizzled with oil.
