A handful of small octopus; 1 clove garlic; 2 tbsp white wine vinegar; 2 tbsp olive oil; mint leaves; bay leaf; a sprig of thyme; salt, black pepper
Marinated Octopus with Vinegar
Clean and wash the octopus and boil them in salted water with a bay leaf, black pepper and the thyme for 3 minutes. Drain them and mix them with the thinly sliced garlic. Dress with a mixture of the vinegar, oil, finely chopped mint, salt and pepper and cover. Leave to stand in a fridge overnight. Serve as a starter with bread and wine.
