2 handfuls of clams (approx. 24); a portion of spaghetti; 1 tinned tomato in tomato juice; 1-2 cloves garlic; ¼ chilli pepper; 4 tbsp olive oil; salt, black pepper

Spaghetti Vongole

Boil the spaghetti in salted water. Meanwhile fry the garlic and pepper in some oil on a low heat until you can smell the garlic. Remove them from the pan. Add the finely chopped parsley and tomato and fry them for a few seconds. Add the washed clams and turn the heat up to maximum. Add a few spoonfuls of water from the spaghetti pan and cook them until the shells open. Remove any unopened shells from the pan. Add the cooked spaghetti and stir. Leave the pasta to absorb the sauce for a minute or two and then serve in pasta bowls drizzled with oil. Add a few twists of pepper and serve immediately.
