100-150 g slightly salted salmon; 1 cup sushi rice; 150 g Philadelphia cheese; 2 tbsp rice vinegar; 1 tbsp icing sugar; 2 sheets nori; a piece of konbu seaweed

Philadelphia Roll

Soak the konbu in 2.5 cups cold water for 30 minutes. Meanwhile wash the rice until the water runs clear. Place the rice in a closed pan with the water from the konbu. Bring to the boil and simmer for 8 minutes. Add the marinade (a mixture of the vinegar and icing sugar) and beat it with a rice paddle. Leave to cool. Place half a nori sheet on a sushi mat shiny side down. Put some rice on the sheet and spread it evenly. Turn it over together with another mat so that the rice is at the bottom. Add the cheese and roll the nori into a tube. Place the roll on a sushi mat covered in slices of fish and roll it up once again. Cut the roll into 6 even pieces and serve immediately.
