2 eggs; 1 cup peeled and chopped tomatoes; 1-2 cloves garlic; 1 chilli pepper; 3 tbsp olive oil; a pinch of cumin; coriander (or basil or parsley); a pinch of sugar; salt; black pepper
Eggs in Hell (Shakshuka)
Peel the garlic and slice the pepper finely lengthways. Place them in a cold pan with some oil and fry them on a medium heat until you can smell the spices. Add the cumin crushed in your hands and the tomatoes. Cook on a medium heat for 10 minutes. Season with salt and add a pinch of sugar if necessary. Make two wells in the sauce using a spoon and break an egg into each. Season with salt and pepper and cook until the egg white has set. Sprinkle with herbs and serve immediately.
