2-4 slices of boiled or roasted meat; 10 boiled quail eggs; 2-3 cucumbers; a bunch of green scallions; a few sprigs of dill; 1-2 tsp. mustard (and horseradish); 2-3 cup cold beer or malt kvass (whey) sour cream; 1 tsp. sugar; salt, black pepper
Grind in a mortar and to a puree condition sliced scallions with black pepper, coarse salt and sugar. Add mustard, egg yolks, grind again. Finely chop egg whites. Cut the meat into small cubes. Peel the cucumber, cut into small cubes, mix with finely chopped dill. Assemble the dish: distribute meat to bowls (in a ratio of 1:1 to the vegetables), 2 tbsp. cucumber and egg white, 1-2 tbsp. onion paste, add 1 cup cold beer or kvass (here: whey and beer), add sour cream. Serve at once. Optional: with cold boiled new potatoes.
