1 chicken (600g); 1-2 onions; the juice of 1 lemon; 0.5-1 cup of dry white wine; 50ml olive oil; 1 tbsp clarified butter; a pinch of chilli pepper; salt, pepper
Peel the onion and cut it into semicircles. Pour over a mixture of the olive oil and lemon juice, season and crush the onions a little. Add the chicken and leave to marinate for at least a few hours. Remove the chicken from the marinade and grill it on both sides until cooked. Meanwhile add the wine to the marinade and reduce it down. Add pieces of the chicken and cook on a low heat for 20 minutes. Meanwhile prepare the couscous covering it with boiling water at a ratio of 1:2, cover with a lid and leave to stand for 15 minutes. Add the butter and finely chopped herbs. Separate the grains with a fork. Serve the chicken on top of the couscous and drizzle with the sauce.
