200g Chorizo sausage; 1 cup carnaroli rice; 1 cup green peas; 2-4 tomatoes (or one tin); 1 onion; 2 cloves garlic; 1 hot pepper; 50ml olive oil; a pinch of saffron; salt
Arroz con chorizo
Fry the onion, pepper and garlic on a medium heat. Add the rice, saffron, tomatoes, peas, chopped sausage and 400ml water or stock. Bring to the boil and simmer until all the liquid has been absorbed. Remove from the head and leave to stand with the lid on for 10 minutes. Serve with lemon.
