500 g boneless fish (cod or a similar white fish); 1 cup flour; ½ cup milk; 2 eggs; 2-3 cups oil for frying; 40 g butter; 1-3 cloves garlic; parsley; salt, black pepper

Cod doughnuts

Defrost the cod in the fridge overnight. Add the sifted flour to the boiled milk and butter in a saucepan and heat through. Add the garlic puree, season with salt, and add the beaten eggs one at a time. Add the chopped herbs and stir well. Cut the cod into small pieces and season with salt. Coat the fish in the batter and fry in a deep pan at 180ºC. Place the cooked pieces on kitchen towel to drain and serve immediately.
