3 apples; 100ml sherry; a handful each of sultanas and raisins, dates, walnuts; honey; chocolate

Steamed apple (Manzana al vapor)

Soak the raisins and sultanas in dry white wine or sherry for an hour. Meanwhile roast the nuts in a dry frying pan on a low heat and then crush them. Remove the stones from the dates and finely chop the flesh. Remove any excess liquid from the raisins and sultanas and mix them with the dates and nuts. Add a spoonful of honey and mix well. Cut the tops of the apples and remove the middle so that the edges are 0.5cm thick. Splash the apples with sherry inside and stuff with the filling. Cover them with the apple tops and steam for 15 minutes. Serve on a plate coated with melted chocolate and drizzle with a spoonful of honey.
