1 chicken; 1 onion; 1 cup flour; 1 egg; 1 tbsp melted butter; dill; salt, black pepper

Chicken Noodle Soup

Cover the chicken with cold water and slowly bring it to the boil removing any foam that appears on the surface. Add a whole onion and simmer for 4 hours. Season with salt. Meanwhile prepare the noodles: Make a well in the sifted flour and break the egg into the centre. Add some salt, the butter and 2 tbsp water. Mix to form a dough until it no longer sticks to your hands. Wrap the dough in clingfilm and place it in the fridge for 1 hour. Cut the dough into 4 and roll each piece out to 1 mm thick. Cut it into strips 3 cm wide and then into thin strips widthways. Boil the noodles separately in salted water for a couple of minutes and then place it in bowls with the chicken meat. Pour over the hot stock; add some ground pepper and dill and serve with sour cream or crème fraiche.
