300g beef (filet or rump); a handful walnuts; 1 cup bulgar wheat; 1-2 onions; 1 egg; 2 tinned tomatoes, a handful of pine nuts; 1 tbsp fenugreek seeds; ½ tsp mint; ½ tsp dry chilli pepper; ½ tsp cumin; 1-3 tbsp flour; 1l vegetable oil for frying; salt; black pepper

Meat Kofta (İçli köfte)

Remove any membranes from the meat and slice it thinly along the grain. Chop it finely into mince. Dry the fenugreek seeds and grind them. Soak the fenugreek together with the salted bulgar wheat in 2 cups of boiling water and cover it with a lid. Fry the finely chopped onion until soft. Add the ground spices and mince meat and cook until the meat becomes a light colour. Add the mint and tomatoes. Fry until soft. Add the ground nuts, chopped parsley, salt and pepper to the cooled mince. Add the flour, beaten egg and water to the bulgar and mix to make a smooth paste. If the bulgar is coarse grind it in a blender beforehand. Make small balls with the bulgar mixture and make a whole in them with your thumb. Place a spoon of meat inside and pinch them closed. Fry in the oil heated to 200°С until golden brown all over. Serve immediately.
