2.5 cups porridge oats; 2/3 cup cranberries; 0.5 cup plain flour; 0.5 cup wholemeal flour; 0.5 cup sugar; 0.5 cup honey; 2 eggs; 100g butter; a pinch of nutmeg; 1 tsp soda;1/3 tsp salt
Mix the flour, soda, salt, nutmeg and cinnamon. With a mixer on a slow speed blend the butter, sugar, and beaten eggs then add the honey. Gradually add the flour mixture and the oats. Add the cranberries. Using a tablespoon, spoon dollops of the mixture 5cm apart from each other onto a baking tray covered with baking paper. Bake at 190ºC for 15 minutes. Remove the cookies and cool on a wire rack. Serve with milk. Store them in a sealed tin or jar.
