2 portions of macaroni; 3 slices of bacon; ½ onion; 3 handfuls of grated cheddar; 1 handful grated parmesan; 2 cups milk; 1 tbsp flour; 2 tbsp butter; 1 tsp smoked paprika; salt, nutmeg
Macaroni and Cheese
Peel and thinly slice the onion and fry it together with the bacon cut into strips on a medium heat until the onion softens. Add the paprika and cook for a minute more. In another frying pan or sauté pan make the béchamel: fry the flour in the melted butter for a couple of minutes and then gradually add the milk, stirring continuously until the sauce thickens. Simmer for 10 minutes. Meanwhile cook the macaroni in salted water for 7 minutes and drain. Add the cheddar, setting aside a handful, to the béchamel stirring continuously until the cheese has melted. Season with salt and add a pinch of nutmeg. Mix the macaroni with the cheese sauce, onion and bacon and pour it into a greased baking dish. Sprinkle the remaining cheese on top and bake in a pre-heated oven at 200°C. Serve immediately.
