2-3 portions boiled spaghetti; 200g boiled or baked turkey; a handful of mushrooms; 2 dried porcini mushrooms; 2/3 cup béchamel; 2 handfuls of breadcrumbs; 2 handfuls of grated cheddar (parmesan); 2 tbsp olive oil; parsley; salt, white pepper
Soak the porcini mushrooms in ½ cup cold water for a couple of hours. Drain the mushrooms and set aside the juices. Cut into thin strips. Wipe the mushrooms with a dry cloth, quarter the heads and fry them in butter on a high heat until golden. Reduce the heat, add the porcini mushrooms and cook for a couple of minutes. Add the mushroom juices and boil for a couple of minutes. Add the béchamel and season well. Add the turkey pieces, spaghetti, 2 tbsp cheese, finely chopped parsley and mix well. Mix the remaining cheese with the breadcrumbs and 1 tbsp oil. Put the spaghetti and sauce into a greased baking dish and sprinkle with the breadcrumb mixture. Bake for 10-15 minutes at 200°C until golden on top and serve immediately.
