2-3 lamb kidneys; 1/2 onion; 1/3 sweet peppers; 2 tbsp soy sauce; 4 tbsp vegetable oil; a pinch of cumin; a pinch of coriander
Stir-Fried Lamb Kidney
Remove any film from the kidneys and slice them in half. Remove any veins and wash them thoroughly. Dry them and score them on the outside. Peel the onion and cut it into segments. Heat the oil in a wok until it begins to smoke (to180°C) and fry the kidneys stirring continuously for a couple of minutes. Crush the cumin and coriander with a knife beforehand. Add the spices to the wok and cook for a couple of minutes before adding the sweet pepper cut into thin strips. Stir well. Add the soy sauce, stir and heat the peppers through. Serve immediately.
